Chihuahua, the largest state in Mexico, at the North of the country is a dry and rugged place, where cowboy culture developed amidst canyons, deserts, and the sierra. And perhaps nothing better represents this than the local spirit, SOTOL. This spirit is named after the desert plant from which it is made: sotol. This spirit is a cousin to tequila and mezcal.
