Whilst some dishes need to marinate overnight, and others have lots of steps to follow (and some need both!) that’s not true of all Mexican food. Take these ‘Drowned’ sandwiches for example; they are ready to eat in less than 20 minutes, and only require 4 simple steps to make.
Ingredients:
- 475ml chicken stock
- 6 tomatoes, peeled
- 60ml chilli sauce
- 6 crusty white rolls
- 200g refried beans, black or pinto
- 200g carnitas, coarsely chopped
- 2 onions, finely chopped, to serve (optional, but recommended)
- Combine the chicken stock and tomatoes in a saucepan, bring to a boil, and simmer for 15 minutes.
- Put the mixture into a blender and pulse until combined and chunky. Return to the saucepan, add the chilli sauce and stir; then set aside.
- Cut the bread in half and scoop out the insides. Spread the beans over one half of each roll, then add the pork.
- Close the sandwich, dip the entire sandwich in the sauce, and serve sprinkled with chopped onion.
