Did you know that when you smoke dry a jalapeno chili you get the chipotle chili? The classic flavour from chipotles brings the mild and earthy spiciness to many dishes in Mexican cuisine. Chipotle chillies are used to make various salsas and sauces. Steep them in liquid to make a smoky marinade. Mix them with cream cheese to make a great dip. The word chipotle, which was also sometimes spelled chilpoctle and chilpotle, comes to English originally from the Nahuatl word "chilpoctli" by way of Mexican Spanish. It means "smoked chili" formed from chil (="chili pepper") + poctli (="smoke"). It is commonly misspelled and mispronounced as chipolte.
The most common pronunciation is chee-POHT-lay, although some of those who are aware of this word's Nahuatl roots prefer the more historical pronunciation chee-POHT-l.
