A member of the cayenne pepper family, the brilliant red Arbol peppers are the primary source for heat in Mexican cooking and sauces. Very Hot. Blend Arbol Paste with taco sauce. Use as the high note in red pepper sauces. Add to meat marinades or basting sauces. The Arbol pepper comes from a lush plant with a thick woody stems. Closely related to the pico de pajaro and cayenne chiles. Bright brick red in color and thin fleshed. Elongated and pointed, measuring about 2" to 3" long and 1/8" to 3/8" across. Has a tannic, smoky, grassy flavor and a searing, acidic heat on the tip of the tongue. Very popular in Asian cooking as well as Mexican. Used in soups, stews and sauces. Grown in Jalisco, Nayarit and the central valley of Mexico (Mexico City region).
