Mexican Potato Salad

Mexican Potato Salad

  • 5 cooked potatoes, skinned and quartered
  • 1/4 cup of mayonnaise
  • 3 tablespoons of oil
  • 1 tablespoon of vinegar
  • 100g of diced ham
  • 1 tablespoon of chopped spring onion
  • salt & pepper to taste
  • 2 tablespoons of parsley


Mix the mayo with the oil & vinegar. Season with salt & pepper adding the onion & parsley. Then finally add the potatoes & ham and mix well. Serve well chilled.
