Mexican Burrito Casserole
Ingredients -
˝ lb lean ground beef
1 medium yellow or white onion, diced
1 Serrano or jalapeno pepper, minced (optional)
Ľ cup black olives, diced (optional)
1 16 oz can refried pinto or black beans
2 16 oz cans enchilada sauce
1 tsp cumin or chili powder
4 large (burrito-size) flour tortillas
˝ cup sharp cheddar or Monterey Jack cheese, shredded
Preparation:
Preheat oven to 375 degrees.
Brown the ground beef, onion, peppers, and olives (if using) in a skillet, breaking up the beef as you cook.
Stir in the cumin and/or chili powder and mix well.
Spoon the filling into warmed tortillas, folding each into a burrito and placing into a shallow baking dish.
Pour the enchilada sauce over your burritos and top with cheese.
Bake for 30 minutes or until the cheese is bubbly and slightly browned.
Serve hot with salsa and watch the casserole haters at your dinner table have an epiphany.
